Tarnish and daily wear
This is the biggest practical difference. Sterling silver reacts with sulphur in the air, so it darkens over time, faster in humid bathrooms or if stored in the open. It needs regular polishing. Stainless steel forms its own protective surface layer, so it stays bright with nothing more than a wipe.
If you want jewellery you can put on and forget about, through showers, workouts and sleep, stainless steel is the easier choice.
Durability
Silver is a soft metal. Thin silver rings can bend out of shape and chains can stretch. Stainless steel is much harder, which helps delicate designs keep their shape with daily wear.
Sensitive skin
Both metals are worn by many people with sensitive skin. Sterling silver can contain traces of other metals, and most steel alloys contain some nickel. If you have a diagnosed metal allergy, ask your GP or dermatologist which suits you.
What about gold?
Both metals are often gold plated. Gold vermeil is gold over sterling silver. Gold plated stainless steel is gold over steel. With both, the gold layer can wear with friction over time. The difference is what shows underneath: steel stays bright, silver can tarnish.
